Traveling through the lens of Relais & Châteaux means a culinary journey awaits – it will be local, seasonal, inspired and refined. With eleven properties spanning Canada, these Relais & Châteaux restaurants and hotels reflect their individual sense of place through their culinary programmes.
Guests will find barnacles responsibly foraged by First Nations experts in our menus on the wild Western British Columbia Coast to elevated Québecois delicacies on the Eastern side and avant-garde interpretations of classics in metropolitan Toronto. Depending on the property, certain ones boast expertise in regenerative farming, beekeeping, wildlife preservation, or sustainable fishing.
Sustainable Cuisine as a Transformative Force for Good
To drive change in line with our values as a global not-for-profit association, our World Culinary Council (a committee of 20 chefs led by our Vice President Mauro Colagreco of three Michelin-starred Mirazur) mobilizes the entire network around two annual campaigns: World Oceans Day in partnership with Ethic Ocean and Food for Change in partnership with Slow Food. The goal is to preserve the diversity of cuisines throughout the world, protect biodiversity and fight climate change.
Representing the Canadian delegation on the Relais & Châteaux World Culinary Council is chef Jason Bangerter of Langdon Hall who was reelected in November 2023 for a second five-year term. During his first term, Jason Bangerter contributed to biodiversity protection by nominating the climbing prairie rose to Slow Food’s Ark of Taste, contributing to the 103 products that Relais & Châteaux chefs successfully submitted for this catalogue of near-extinct foods. He also contributed to launching the United Nations World Oceans Day Instagram account by doing a live cooking demonstration to raise awareness about sustainable seafood with species validated by our partner Ethic Ocean.
The trends of fine dining ‘trickle down’ and create longterm culinary evolution, which is especially important when about one third of global greenhouse gas emissions today come from the food system (FAO). We know it is our responsibility to future generations to ensure we innovate consciously.

Relais & Châteaux members protect and promote the wealth and diversity of the world’s culinary and hospitality traditions, to ensure they continue to thrive. They are equally dedicated to preserving local heritage and the environment, as articulated in the association’s Vision presented to UNESCO in November 2014.
